Head’s Red BBQ Sauce – Made in Illinois Series

Head’s Red BBQ Sauce has a long history of awards.

As posted on their site, Heads Red BBQ sauce is a product of Head’s Red BBQ which is based out of Roselle, Illinois. The Heads Red site states that Bill Mehilos developed Head’s Red BBQ Sauce when he got involved in BBQ competitions in the Midwest area in 2002. He states he always enjoyed cooking authentic slow cooked BBQ at home and decided to try his luck competing with other BBQ cooks from across the country in these competitions.

He took his home sauce and developed a winning combination. The sauce was a big hit and worked well for him on the competition circuit garnering him calls in different area BBQ competitions including Grand Champions in Racine Wisconsin in 2006 and 1st Place Award of Excellence from the national BBQ Association in 2010.

Illinois Barbecue Society Midwest BBQ Fest 2016

And so it continues, first it was a sauce class, then a sauce competition and now it is an event including the Sauce Championship, classes and a Fest. The 2016 Illinois Barbecue Society, Midwest BBQ Fest is set for early 2016.

This started as a small event to showcase a couple of grills and cooking skills and has grown to a great event. Please see the Midwest Expo page for more details.

Captain Curt’s BBQ Sauce – Made In Illinois Series

Captain Curt’s Famous Boss Sauce – Mild. Love the label, even has his phone number on it. We tried it, the line is disconnected. The label reads:

“Curtis Briggs founded Curt’s Bar-B-Que Restaurants over 20 years ago in Chicago, Illinois. After many years of satisfying the palates of people from all over the world, Captain Curt, as he is known today because of the overwhelming demand for his sauce, started packagin his “Famous Delectable Boss Sauce” over a decade ago from a family recipe developed by his grandfather, enhanced by his father, and handed down to Curt as a young man in his hometown of Pine Bluff, Arkansas.

Ladies and Gentlemen, I am proud to present Captain Curt’s Famouns Bar-B-Cue Boss Sauce.”20150710_084909

Although the sauce remains available, the Facebook page is pretty stagnate. The Chicago Tribune ran a story in 2009 about hims and his restaurant. You can read a great review about this sauce on BBQ Sauce Reviews. We do not review sauces, since we have a national sauce competition and do not want to be biased. We cannot locate a website for this sauce. If you find one, please email us. Captain Curt’s LinkedIn page gives a little insight into the man stating:

“Curtis Briggs is a man with a dream. Starting out teaching in the Chicago Public School System, he left to pursue his passion of great barbeque and barbeque sauce. In 1982 He opened Captain Curt Barbeque Shazzam a barbeque eatery. He later on opened a sit down restaurant for patrons to come and enjoy great barbeque with family and friends. Today he is currently bringing barbeque to the nations.”

The sauce comes from Captain Curt’s Bar Be Que,  8210 S Cottage Grove Ave, Chicago, Illinois 6061. All the phone numbers we tried are out of service. We reviewed all of the State of Illinois corporations filings that we could locate for Captin Curt’s and they are all dissolved corporations or otherwise not current. Maybe we have the wrong name. Perhaps this is the end of Captain Curt’s and they are winding down? If you have any information, please let us know. I hate to think that we may have the last bottle on the planet. We are opening it next week for our Wednesday BBQ day in the office.

After serving in the United States Navy, Argia B. Collins moved to Chicago’s west side in the mid-1940s, where he worked for his eldest brother who owned a local grocery store. There were six Collins brothers. All were spirited entrepreneurs who opened rib joints across the city heralded for world-class barbecue.

In 1950, Argia B staked his claim on Chicago’s south side, opening his first restaurant in the historic Bronzeville neighborhood. He eventually opened two more locations including one in Gary, Indiana. A culinary perfectionist, Argia B wasn’t impressed with the ho-hum national brands available to restaurants at the time. So, inspired by his southern roots, he crafted his own tantalizing new sauce—sweet, tangy, savory, sublime! His restaurant soon became the test kitchen for the delectable recipes he would create experimenting with exotic spice and seasoning blends.

Collins embarked on a major advertising campaign to promote his popular and now widely-distributed barbecue sauce. MUMBO SAUCE gained national acclaim with its 1970 LIFE Magazine debut. The word was out. MUMBO became the sauce for discriminating palates, and Argia B’s Bar-B-Q restaurants became a must-visit destination for barbecue lovers from across the country.

The Rules: the Illinois BBQ Society has the sole discretion to determine the winner and award the prize. All decisions are final. The selected entry becomes the property of the Illinois BBQ Society. Well, of course it does, we are going to use it for the competition and we gave you $100 worth of sauce. We’ll also give you credit for your creative name.

The Illinois Barbecue Society is holding a two hour BBQ Sauce Class in conjunction with the 2016 Sauce Championship. February 2016.

Have you ever wanted to taste dozens of sauces at one time? This is your chance. Learn the basic recipes that will allow you to personalize them and create your own unique sauce at home. There is no participant cooking in this class. This is an instructor lead course with a cooking demonstration, tasting opportunity and  You will also learn about spices and how to make your own sauce at home.

Participants will receive a Basic BBQ Sauce spice packet in order to make their own basic sauce at home.

The BBQ Sauce Class will be held February 2016 with the 2016 IL BBQ Society Sauce Competition People’s Taste Judging.

You will have the opportunity to taste over 40 sauces minimum and up to 200 sauces or more (depending on competition entries).

Class size is limited.
