Illinois Barbecue Society, Best-Off-The-Grill Barbecue Championship

You have asked for it and now we are ready to announce the 2017 Illinois BBQ Society Contest.
The BBQ Championship is open to three categories: Professional, Amateur and Kids. There will be cash prizes for professional teams and awards for all turn-ins and overall winners.
There are openings for 40 professional teams, 40 amateur teams and 20 kids’ teams. This is the first year for this competition and, at this time, we are planning on holding this only on Saturday. For this reason, we will have ribs, chicken, bacon (pork belly) and Best-Off-The-Grill categories for the professionals. All four turn-ins are required for the overall winner.
The amateur teams will turn in ribs and Best-Off-The-Grill. The kid’s teams turn in Best-Off-The-Grill. Kid’s teams must be 15 years old or under. Electric smokers are permitted only for the Amateur and Kid’s teams.
Contestants will be able to set-up early morning on Saturday. Turn in times will be late afternoon. Event closes at 10:00 p.m.
We believe that it is time to let the creativity of Pit Masters show through and open the contest to new categories. Bacon (pork belly) can be smoked, grilled, sliced, cubed or any other form as long as it hits 145 degrees internal temperature.
Best-Off-The-Grill is any single item, no more than about four to five bites in size and prepared 100% at the contest and cooked on any kind of grill or smoker. Any appetizer, entrée, dessert or other food item is acceptable. No overnight marinades, no prep at home, no slicing or cutting of any kind before the start of the contest. You may prepare any spice, rub, spice blend or BBQ sauce in advance.
Bring any smoker/grill, lawn chairs, canopies, refreshments and show us your cooking skills. Applications will be posted soon.
